Pizza lends itself to multiple interpretations of toppings, as this recipe for chicken barbecue pizza demonstrates. Bread replaces the crust in this recipe.
I use this recipe for Chicken Barbecue Pizza as a quick meal or snack when the children are super hungry. This recipe doesn't require much preparation and the finished product is very satisfying. This pizza is also very good cold, so it works perfectly for packing in lunches.
If you don't have shredded chicken on hand, use rotisserie chicken from the deli. This recipe provides a wonderful way to stretch shredded chicken pieces into a second meal. You can also substitute canned cooked chicken.
Chicken Barbecue Pizza
Makes 3 to 5 servings
Ingredients:
- 1 loaf French bread or 1 package of English muffins
- 1 cup desired flavored barbecue sauce
- 2 cups leftover cooked chicken breasts, shredded into pieces
- Desired toppings (optional), such as sliced mushrooms, chopped red or green bell pepper or crumbled bacon
- 2 cups desired grated cheese, such as mozzarella or provolone
Directions:
- Preheat oven to 350 degrees F.
- If you are using French bread, cut bread into slices about 1 inch thick. You should be able to get about 7 slices out of a full loaf of bread. If you are using English muffins, use a serrated knife to split them evenly in the middle, separating the tops from the bottoms.
- Place your bread or muffins on a baking sheet.
- Spread about 1 tablespoon of barbecue sauce over the top of the bread slices or muffins.
- Add enough chicken to cover the top of the bread slices or muffins.
- Add desired toppings (optional) on top of chicken pieces on the bread or muffin slices.
- Top bread slices or muffins with grated cheese and place them in the oven.
- Bake until the bread is toasted and the cheese is melted, about 10 minutes.
- Remove from oven and let cool slightly on baking sheet until ready to serve.
Chicken Barbecue Pizza Variations
- If you are not a big fan of barbecue sauce, try using alfredo sauce as a substitute. It will give your pizza a more creamy consistency and the flavors of the pizza won't be as tangy.
- If you are looking for an even healthier conscious meat choice than chicken, try using shredded turkey breast in the recipe. For example, consider using the meat that you can remove from a large turkey drumstick sold in the meat case at your local supermarket.
- Experiment with different types of bread. Brioche, Pullman loafs, whole-grain and other varieties of bread will add new flavors and textures to the pizza.
